Boot to the install disc, click Utilities in the menu bar at the top, and click System Profiler. It will say either PowerPC or Intel next to Processor Name. Once you know which processor your Mac is using you'll be able to narrow down what the problem is. If you're trying to install an Intel version of Tiger onto a Macbook you'll need the specific install disc for your model. The normal Tiger install disc is PowerPC-only and won't work on an Intel machine so Apple had to basically patch OS X to work on Intel machines until they could work out a universal installer for both systems. If you have a PowerPC machine you can use the normal Tiger install disc, or if you're installing Leopard it doesn't matter what kind of Mac you have (it works on both PPC and Intel). If that's the case I'd say you either didn't format the hard drive in HFS+ (Mac OS X Extended) or you're doing exactly what I just described above, but in reverse - using Intel install discs for a PowerPC Macbook. The install disc should be black if you're installing Tiger - the model-specific install discs are grey. If you're installing Leopard just go to Utilities from the install disc and click Disk Utility. Erase the hard drive and make sure you have Mac OS X Extended (Journaled) selected as the format.
