when storing apples, should I use sealed containers with CO2 to draw down the oxygen?

I have a fridge dedicated for apple storage and intend to store until next harvest season.

Apples give off ethylene gas. Ethylene gas tells the apples to ripen faster. The ethylene gas apples give off tell other fruits, vegetable, and even flowers to ripen (and die) faster.

You can put an apple in a bag with green bananas, and have ripe bananas in just a day or so.

When apples are put in long term, commercial storage, they store them at very cold temperatures (just above freezing), and the storage refrigerator (which is very large, and airtight) is then pumped full of Carbon Dioxide (Co2).

A homeowner refrigerator will not be airtight. If your boxes are airtight, then it will indeed prolong the shelf life of your apples. However if your containers fill back up with oxygen, the apples will start to "breath" and rappidly fill the boxes with ethyele gas, causing them to ripen and rot much faster.

I always keep some of my apples from my orchard for a goodly part of the winter. However they never last from one harvest to the next.

Part of how commercial outfits do it, is to put a wax coating over all the apples, to help cut down on the apples being able to "breath" in oxygen. The wax coating also contians insecticides, and fungicides to help kill any insects, or fungis rot from starting.

What are you storing the apples for? Have you thought about using other methods? I dehydrate, and can some of my apples to get from one harvest to the next.

You also want to make sure you are trying to store an apple that does well with long term storage. Some do very well. Other species will rot after just a few weeks no matter what you do.

Store only fruit that is a little UNDER-ripe, and blemish free.
